A healthier choice; Highlands are known for their excellent flavor
and low cholesterol content. Studies have proven that grass fed
Highland beef is actually lower in cholesterol than chicken or
turkey! Our cattle are born and raised on a rotational grass
pasture, free of herbicides or pesticides, and never confined to a
feedlot. We are dedicated to the humane treatment of all our
animals. Our steers are on a diet of rich grasses and legumes
without the use of hormones, additives, steroids or animal
by-products.
Our purely grass fed beef is available year round. Our beef is dry
aged for 14 days to ensure tenderness
and flavor. Longer aging times are available upon request.

Cows, bulls, steers or heifers. Contact us for
availability and prices. Many colors to choose
from including red, yellow, black, dun, white

Tanned Scotch Highland Hides:
Decorative hides with hair on one side and tanned leather
on the back. Available in several colors and sizes
including red, dun and black. We also take special orders
if we don't have the color you want. Use as a rug in front
of the fireplace, over your log railing or as a wall hanging.

Grass Hay:
Round and small square bales of timothy/brome grass. Put up
dry and wrapped tightly.

based on the actual
hanging weight and
includes all
processing costs.
Hanging weight is the
weight of your beef as
it hangs at the butcher
shop, before bone is
removed and the aging
process begins.
Dry aging is the
process where meat is
held in a climate
controlled cooler where
natural enzymatic action
is allowed to loosen the
meat fibers for
tenderness while
enhancing its natural
flavor.

Grass fed beef has
up to four times the
amount of Vitamin E
than meat from
feedlot animals and
is low in
artery-clogging
saturated fat. It is
also higher in
Conjugated Linoleic
Acid (CLA), a
nutrient associated
with lowering
cancer risk.
